Kuma Kitchen Series - Cheesesteak Burritos

Ingredients: 

1 large, or 2 small ribeye steaks (about 4oz or 100g per burrito)
3 cloves of garlic
1 green bell pepper
1 red bell pepper
1 yellow onion
3 jalapenos
¼ cup olive oil
Large flour tortillas
Cheese Whiz
Provolone cheese slices
Dijon mustard
Mayonnaise
Hot sauce

Cheesesteak Burrito

Preparation: 
  1. Finely mince the garlic, add to a bowl.
  2. Thinly slice the steak, add to the garlic.
  3. Add 1 tbsp olive oil,  2 tbsp dijon mustard and 2 tsp black pepper, toss to coat and let sit for at least 15 minutes.
  4. Slice the bell peppers, onion, and jalapenos into strips.
  5. Preheat a large cast iron, or steel pan on your campstove. Once smoking hot, add the steak into it, spread evenly, and toss once it browns on the bottom. 
  6. Add the peppers and onions into the pan, pour remaining olive oil on top, reduce the heat to medium and toss to evenly disperse everything in the pan.
  7. Continue to cook until the onions are translucent, and the peppers are softened.
  8. Lay down the tortillas, and spread cheese whiz, mustard, mayonnaise and hot sauce. Leaving about 1” around the edge.
  9. Add sliced provolone cheese, then some of the steak, peppers, onions.
  10. Fold the burrito tightly, ensuring the ends are folded in, then toast both sides in a cast iron pan over medium low heat. Just until the outside is starting to brown, and the cheese has melted.
  11. Serve while warm.

Tips:

You can cook the steak and the veggies in separate pans if you want more control over how everything gets dispersed, but for the sake of camp convenience and 1 pan clean up, we like to do it all in one.
